Coconut craving

Coconut Milk Rice
Simple but rich in flavor! This dish is prepared for all special occasion in my house. The rice has a buttery and creamy taste, which can be accompanied with any gravy (Vegetarian or Non-Vegetarian).
After all, it is easy to cook! I use Basmati Rice for this one.


Rice: 2 cups
Coconut milk: 1/2 cup (Can milk can be used) or want to spend more time (Grind and extract from the coconut!)
Water:2 ½ cup (1/2 has been reduced from normal ratio because of coconut milk)
Onion: 1 count
Green chilies: 4 to 5 according to your spice level.
Ginger-garlic paste: 1 tsp
Ghee: 3 to 4 tsp
Salt: as per your taste.

Cinnamon stick: ½ stick
Cloves: 2 counts
Bay leaves: 2 counts

Method of preparation:

Wash the rice and soak for 10 min. Heat the pan and add the ghee and the masala items followed by onion and green chilies. Once the onion starts to be translucent add the Ginger garlic paste. Once the aroma starts to fill your kitchen, the rice can be added. Stir the rice slowly with the masala and don’t break the rice grain. After 3 or 4 minutes, it is time to add the coconut milk and water. Pour the coconut milk, the water and the salt too. At the boiling stage reduce to low flame and close with a tight lid. The Coconut milk rice should be ready in 20 min. The rice can be accompanied with any gravy.

Hi Cham,Is that a one called Ghee Rice,i was looking for the recipe for long time,i'll try it soon and let you know,it seems soo yummy
