Lima Bean or Butter Bean

Lima Beans Curry



The lima bean has a buttery flavor. No wonder why it has a butter bean tag too. It can be found in freezer section in US. One of the item, I like to store always in my freezer. When I am lazy enough and decided not to cut any vegetables. I run to my freezer stock up.
This recipe came from my Good friend Preeti’s. About her, she makes delectable Indian food. No words to describe her Passion for Food. I always admire her cooking skills.

Ingredients:

Lima beans: 1 packet
Onion: 1 big one diced
Tomato: 1 one diced
Curry leaves: few
Ginger-Garlic paste: 1 tsp
Chili powder: 1 tsp
Oil: 1 tsp
Salt (As per your taste)

Masala to be grind:
Coconut:
2tbs
Cinnamon: ¼ stick
Method:
Heat oil in a skillet and sauté the onion first once it turns translucent
Add the tomatoes and let cook well
Mix the Ginger-Garlic paste and fry for 1 or 2 minutes.
Add the beans, chili powder, salt and water. Cover with lid.
Once the beans are cooked, mix the ground masala and curry leaves.
When the masala and beans are thick enough. The dish is ready to serve with rice/roti.

This looks great - super healthy too. You can't have better than a well stocked freezer and pantry!

I fall in the "dummie" category when it comes to Indian food. I absolutely love Indian food but fail miserably when trying to prepare it at home. Saw your introduction post on the Leftover Queen and will happily explore you blog, maybe I'll learn something!
