Sweet Ragi Sevai

One day, everyone got a sweet invitation from Siri and DK for their house warming. I rushed to their door and hanged out for a while, browsing each and every section. Even it indicated 0 postsenyum. This duo built a new food forum and announced a fun idea International food league! We have to choose a box and crack the riddle and cook a dish with the ingredient. When I sent a message to Siri, she sent me the riddle: This was my riddle: I am old and ancient and in many places a staple health and longevity are wonders I wear like a lapel My different forms give different taste one form is enjoyed in the mornings - eaten in haste! Another form is in form of soups and porridge Or in forms of plain or stuffed breads I thrive in the hot summers..But make you feel good and warm I am good to people although many just use me for feeding birds and cattle in farms I am just no mean and lowly grass with striking resemblance to maize I have ‘pearls’ of wisdom to share if you want, to listen to me with grace People with celiac turn to me I give you fibre and irons, so rich i am for the world to see Now sit tight and give it a hard thought - be clever be sane to guess who I am, the highly nutritious and healthful whole grain. I red once, twice, thrice and X times …..but got any clue tension I closed the riddle with one hint but not sure “enjoyed the morning,” hinted “wheat” and I forgot about the riddle for 5 days. The 6 day,I opened the riddle and got a clue “ Celiac” so I withdraw Wheat from my list… I had millet and barley … so after doing a research I got it was “ millet”was the only grain eaten by human being and animals. Sent my message to Siri with the answer and i waited patiently that should be the right onerindu I got the reply back: Well done, you re the first one to crack at first attempt this riddle!tepuktangan I was literally jumping out my chair! Millet was my favorite one! I already got millet as a secret ingredient for arusuvai. I enjoyed making porridge with Finger millet… Roti for my husb, but the ragi sevai, was a recent discovery in India market. We get in dry form like sevai, and have to soak in hot water… But in US, I didn’t find it in any store. So the next step, I ventured in my kitchen. My first trial failed: I used only ragi, but did’t hold shape of sevai while steaming. So I just added some rice flour and everything came together. My mom prepares for evening snack this ragi sevai and we all love it love The ragi sevai is simple and healthy, can be given even to toddler. 




Ingredients: 


Ragi flour/ Finger millet: 1 cup
Rice flour: 2 tbsp (If u want a light colour or don't like ragi add 1/2 cup or more) 
Salt: ¼ tsp

To Sprinkle: 

Coconut: ¼ cup scraped 
Cardamom: 4 or 5 pods crushed
Sugar: Per ur taste 
Ghee (optional) 
Special Ustensil Iddiapam/sevai mold and idli plate and cooker

  Method to prepare Boil a cup of water with salt, pour slowly in the dry ingredient (flour) and form a soft dough (like roti). Keep cover until you re ready to put in iddiyapam mold. Fill the mold and press it in idli plate and cook 7 minutes. Once cooked, take it, when they are still hot sprinkle some grated coconut,sugar, cardamom and ghee. Enjoy this healthy snack in the evening or morning! I dusted with powder sugar ! Kudos to my Dear Siri and DK to host such event i had much fun to crack it down the riddle

Mitr.Bay Thanks for ur lovely comment , i love this dish because everyone can adjust the sweet level. My mom serves in different bowl the sprinkling so we feel free to sprinkle by choice!

I know about this sevai, but have not tasted it so far. I don't know if instant ragi sevai is available in Indian stores. I don't have the acchu. Thanks for the recipe Cham. I have a murukku acchu with various plates, i should check whether I have the small holes one, so I can use that to make this sevai.
