Broccoli soup

Sangeet has launched a new theme "Healthy event" – Fiber rich. I choose to send Broccoli soup, which is rich in High fiber.
Broccoli looks like cauliflower and belongs to Cabbage family. This green vegetable is high in Vitamin C, Soluble Fibre and has an anti- cancer potential too.
The fact when it is healthy, it hard to please everyone palette. If I stir fry the broccoli and bring it to table. I can only hear some complaints: we don’t eat tree or raw vegetables.
To satisfy or trick the bigger and little one, I just blend the vegetable so they could not find the main ingredients. This recipe is great for dieting too :)

Note: Boiling the broccoli, reduce the anti-cancer compound! So microwaving, steaming, stir-frying are great!

Ingredient:

Broccoli: 2 cup
Carrot: ½ cup
Celery: ¼ cup
Frozen peas: ½ cup
Water: 2 cups or vegetable stock (I used water)
All purpose flour (maida): 1 tbsp
Milk 1 %: 1 cup

How to make the soup?

Sprinkle some water to broccoli and steam in microwave for 3 min.
In a pot, add water, carrot, and celery and let it cook. Take about 10 min.
Now take off of the quantity of the cooked vegetable (carrot, celery and steamed broccoli), put it in blender and make a coarse puree.
Mix the flour in milk, pour the milk mixture and the vegetable chunk, peas, let it thicken the soup! It takes only 2 minutes or less.

If you want to feed toddler or kid, make it smooth all vegetable, it will be creamy and add some cheese too.

Can be served as a light dinner too.

Important notice: Salmonella: is a Tomato outbreak, so watch out the safety in the State (US only) where u reside. Check out the latest news.

I read abt tomatoes, I am really very scared to use them. I just saw 145 cases are registered at hospital. Scary yaar.

Avoid
-Raw Red Roma

so now tomatoes also on outbreak? what else is in store? How can we avoid all these veggies? they are making us scary1

Coming to the soup, I am also not big fan of broccoli. I usually make it either chutney or use it in dals! love your way of making the soup, Cham! looks so refreshing and yummy!

Yes Uma, CA identified 2 cases so far ... avoid eating raw tomato like in salad, salsa, guacamole, probably chat, burger, etc... and the varieties Madhavi mentionned...Wash all the tomatoes by slightly scrubing in water. I cannot imagine any cooking without tomato!
