Soya Vegetable Pulao

Lazy or tired after a busy day, lunch box idea, run out of vegetables, don’t have time for an elaborate meal, want to please a crowd, what ever reason you bring, only one satisfying idea: pull your big pot out, time to put few ingredients together and cook without any pressure a complete satisfying meal.
Yes, it is time to make pulao. You can prepare the pulao for two or to feed an army. I make it whenever I don’t want to cook an elaborate dish, the puloa can be served with any gravy or simple raita. A complete satisfying dinner or lunch is ready without much effort. My version is a creamy rice mixture cooked with vegetables and soya to boost your protein level.

Soya Vegetable pulao
Preparation time:
Soaking rice: 15 min
Cooking time: 20 min
After cooking:10 min
Total preparation: 45 min

Basmati rice: 1 cup
Coconut milk: 1/4 cup
water ratio: 1 1/4
Soya chunk (nutrela): 1 cup
Vegetables: peas, carrots or veg of your choice: 1/2 cup
onion: sliced lenghtwise thinly
Green chilis: 6 num less or more according your spice level
Ginger-Garlic paste: 1 tsp
Salt: according your taste

Ghee: 1 tbsp
Black & green cardamom: each one crushed slightly
Cloves: 2
Cinnamon stick: 1/2 inch
Bay leaf: 1

Cilantro: 1 tbsp chopped
Mint: 1 tbsp chopped

Before you start cooking:
Boil 3 cups of water, swtich off the stove and add the soya chunk. After 5 min, they fill fluff well. Now discard the hot water, squeze the chunk and drop in cold water. Repeat the process 3 times. This will help to remove some soya smell.
Rinse the rice well, soak it for 15 min.

How to bring together in one pot?

1.Start heating the ghee in a big pot which has a tight lid. Add all the seasoning ingredients and fry for a seconds.

2.Add the onion & chilis, fry until they turn golden brown, add the ginger-garlic paste.

3.Drop all the vegetables & Soya chunk, fry for few minutes

4.Pour the coconut milk and the water amount indicated, adjust the salt level.

5.When the water mixture starts to boil, reduce the flame to low and add the rice, slowly mix it and cover with tight lid.

6.Let it cook for 20 min

7.Switch off the stove & DO NOT OPEN for another 10 min

8.Garnish with leaves and serve with Raita.

Tips: Start soaking the rice first and proceed with cutting vegetables. You don't need to wait for the rice!

1.My one pot dish is ending to Archana's kitchen one pot dish event.
2. Rice is staple food for a south-Indian, Sending to Mixed rice varieties event by EC.
3.Coconut brings the rich and creamy taste to any rice dish. This one will be my second entry to Suganya who is hosting Coconut for AFAM , originated by Mahes.
4. Soya is protein rich, sending to protein rich event hosted by Sangeeth.
Have a great weekend!
