Gardening is one of the recent interests that I discovered after buying a house. Next, the West coast weather made favorable to grow few vegetables and flowers either in soil or pot. I keep my annuals in pots to make easier my fall cleaning.
But gardening brings me some relief and I enjoyed spending my time in my backyard :)
Guess you have a fair idea now, how my little vegetable is born!
Tomatoes are the first vegetable that we enjoyed this season. Made few salad, soup, rasam and ended with tomato chutney!
Thakkali chutney/ Tomato chutney is my mom’s recipe. Little tangy and the spice is balanced with coconut is great hit in my family. Mom usually serves with idli or dosa for breakfast.
Tomato: 3 medium /chopped
Onion: ½ sliced
Red chili: 3 or less or more
Coconut: ¼ cup
Oil: ½ tsp
Oil: ½ tsp
Mustard seeds: ¼ tsp
Curry leaves: few
Heat oil in a pan; fry the onion first for few seconds until they turn translucent next add the tomato & chili and let cook until they become soft and juicy.
Let it cool completely.
Add the coconut and grind it with little water.
Heat oil and do the seasoning starting with hing. When the mustard seeds starts to split, switch off the stove and add the curry leaves. Pour into the chutney and mix well.
This tomato chutney can be served for idli/dosa or even rotis! Dosa batter is usually an item that I keep in fridge.
