Microwave desi style Mac & cheese

Sometimes, probably most of the time, I just walk to the kitchen without any idea what to cook for dinner. I open the fridge and grab the veggie which require less labor work (peeling, cutting, chopping, etc,) Just throwing few ingredients in your pot and you create a new dish. But again, be logical and play with your taste, think the spice you like, veggie and create. This mac and cheese is prepared like this. Just modified according my taste bud and the availability of my pantry. Please feel free to modify according your need. Only thing, I cooked everything in microwave. So if you don’t have one or prefer stovetop you could do it. The dish should please all moms; Kids will get their dose of veggie, cheese and mac.

  Ingredients

Microwave Kraft Mac and cheese: single packet – or cooked macaroni pasta (1 cup)
Bell pepper (red & green) diced: ½ cup
Spring onion diced: 2 tbsp
Tomato paste or pasta sauce: 2 tbsp
Cheddar Cheese reduced fat: to cover the dish (2 tbsp)
Chili powder: ½ tsp
  Garam masala: a pinch
  Oil: 1 tsp Salt: pinch

Method: Take out the cheese packet (I didn’t use it) and keep it aside. Take a microwave safe bowl, add 2/3 cup of cold water, add the macaroni and cook for 4 minutes. There could be a little water. Take another bowl; add the oil, veggie, set the microwave for another 45 seconds. Take out and add the macaroni, tomato sauce, chilli powder and garam masala. Adjust the salt. Keep another 2 minutes. Take out and mix again, sprinkle some cheese over the top and keep another 20 seconds. As I said before, Please free to modify this recipe.
