Wacky soup

Stop don’t click away! No horror movie dish, it is edible. The color should make you either : Click away or Curious about the ingredient.
Wouldn’t be fun to serve such a soup? If you have a kid who oppose to vegetables and soup, sure they will be very curious to taste this one :)
Without further confusion, I reveal the ingredient. The combo of red cabbage and potato create such an eye glimpsing mauve color.
Some information about the red cabbage: the plant changes its colour according to the pH value of the soil, due to a pigment called anthocyanin. (source:Wikipedia.org)
However, when you cook the purple cabbage turns blue, to retain the color add some vinegar or some acidity fruit.
If you are not a salad/cold slaw person, pickling the red cabbage is the best way to retain the nutritient value.
The recipe is very easy and made with few ingredients: 




Red cabbage soup
Print


Red cabbage: ½ head chopped
Medium size potato: 2 num- peeled and diced into cubes
Onion: small one, diced
Cumin powder: 1 tsp
Ginger: 1 tsp grated
Salt: according ur taste
Olive oil: 1 tsp

Garnish and Flavoring:
Sour cream:
few dollops
Cilantro leaves: minced finely
Freshly ground Black pepper

Method:

I did the soup in my pressure cooker. You can use a big pot if you don’t have a pressure cooker.

Heat the oil, saute the onion add the cabbage, potato and ginger . Pour about less than 2 cups of water, season with cumin powder and close the lid.
Pressure cook in high flame , switch off after 2 whistles. Once the pressure is realeased completely, open the lid and with hand blender make a fine puree.
Adjust the salt, serve in bowl add a dollop of sour cream, cilantro and some more cumin powder, black pepper.
Enjoy this creamy purple soup.

Wow, red-cabbage soup is really unique! Never heard of this before.. And you are right, this is a good way to dump the veggies to the kids.. Purple can definitely please my daughter :)

hahah aaha..it didnt scare me but it certainly made me curious :)...never would i have thought of pureeing cabbage to make a soup...that too red cabbage...just bought it ones..didnt like the texture compared to the regular one...this certainly does make u think abt it all over again :)..good pone cham
