I fill my shopping chart without hesitation every week with this herb: cilantro. The aromatic green herb is always used at the end of curry/gravy to garnish or bring the extra flavor to my dish. Well if you are not used to cilantro, you might feel the smell is overpowering the dish. But like any other herb, we have to acquire the taste in time period.
But, featuring a recipe with cilantro as a main ingredient not an easy task, I have already blogged Chutney, dip, pesto, Kurma. So I was looking to use in different cuisine and found the Cilantro lime dressing/vinaigrette, which was pretty interesting and different than usual. The dressing is tangy and aromatic!
Recipe adapted from Eatingwell but modified according my taste and need.
Cilantro lime vinaigrette & fruity salad
Ingredients:
Cilantro: ½ cup packet
Olive oil: 2 tbsp
Lime juice: 2 tbsp
Orange juice: 2 to 3 tbsp
Salt: ¼ tsp
Pepper: ½ tsp (used one jalapeno)
Garlic: one clove minced
How to blend it?
Throw all the ingredients together in blender jar / mixie and blend it.
Is that so complicated?
The fruity, herby and tangy salad is drizzled over a leafy, fruity, salad.
For the salad:
I really tossed whatever I had in my fridge, some spring mix (greens), some strawberries sliced, one avocado sliced, feta cheese and some microwave spicy roasted chickpeas!
*For the microwave roasted chickpeas, you can check Jaya’s Roasted chickpeas in microwave. Thank you Jaya for a quick spicy snack idea!
*Cilantro lime dressing is for cilantro who is hosting Jhiva of ingredient: cilantro, event originated by Mahanandi

*Strawberries are flooding the market (well it is one of the fruit we get it a year around in US , but only price and sweetness make difference).

Yummy salad Cham..am a grt grt cilantro fan..knw wat..I use to puke on its sight,when I was a kid..detested it so much n used to fight with mon for putting it in Sambars n all..n now.I cant think of any dish without cilantro..hee..what a change no..Thanks for the yummy salad..n I loved the pic..:)

I love the idea of vinagrette made form cilantro.
Wish i had them in abundence, wer ei love there is no asian shop so i buy them a lot wheni go to a asian shop in another town and then freeze them.
