Vegan Thai Treat!

The weather turned extremely hot! There is plenty of sunshine and I feel like summer. Well, it is only for 2 more days and we will be back in 60’s, which is pretty normal for spring. We are enjoying the heat, with some refreshing drink, salad, and barbeque! I prepared a vegan Thai treat. Thai sweet corn fritters served with sweet chilli sauce, for the side dish, I made the Thai mango salad with sweet, salty, sour, spicy touch. Probably, how the Thai food is referred! The fritters are excellent snack or appetizer and can be made in a jiffy!
I loved both dishes, as I am huge fan of mango, the mango salad is winner.


Thai Corn fritters
I followed this recipe like a base but I turned into vegan by omitting egg, fish sauce!
Ingredients

Rice flour: 1/4 cup
Corn starch: 1 tbsp
Sweet corn (can): ½ cup
Soy sauce: 1 tsp
Cilantro: 2 tbsp minced
Chilli powder: ½ tsp
Water: ¼ cup + 2 tbsp (plus or minus the last tbsp)
Salt: a pinch
Oil : to Spray


Method:
Mix the rice flour and starch, chili powder, soya sauce together, add the water slowly until is thick and without lumps. Add the corn kernel, cilantro.
Heat a skillet in medium heat, spray some oil or even add a tsp of oil. Drop a heaping spoon full of the mixture and let it cook completely one side and flip over.
Remove and drain in paper towel.
Continue with the rest of the mixture.
Serve hot with sweet chili sauce.



Thai mango salad



The main ingredient is mango, make sure to adjust according ur taste or need the rest of vegetable of your choice like green bell pepper/bean sprout, cucumber, carrot etc. Green Mango: 1 cup peeled and julienne cut ( I used a firm sour variety)
Red bell pepper: ½ cup julienne cut
Peanuts: ¼ cup crushed

Dressing:
Soy sauce:
2 tbsp
Sugar: 1 tsbp
Thai chilli: 2 num chopped
Peanut oil: 2 tsbp
Cilantro: 2 tsp minced

Mix the soy sauce, sugar well add slowly the oil and whisk briefly until blended. Add the chilli and cilantro.

Pour over the julienne cut veggies and toss it, sprinkle the crushed peanut over and enjoy the sweet, tangy, spicy salad!
