Okonomiyaki is Japanese savory pancake or pizza. The word “Okonomi” means “what you like” or “what you want” and “yaki” grilled or cooked. A customer can choose whatever he/she likes to top: from seafood to meat of their choice.
If you are a purist please forgive me, I tweaked into vegan the batter. Originally, the batter contains flour and egg, dashi (fish stock) as main ingredients, the cabbage and mountain ham is mixed too. The pancake seems originated from Osaka but popular through out the country. Pretty cheap to fit anyone budget and filling too!
Toppings, batter and way of cooking may vary according the regions:
Osaka style- Okonomiyaki : cabbage and batter are mixed together to make pancake (ideal for novice pancake maker)
Hiroshima style-okonomiyaki : the cabbage is cooked in hot surface and they pour on top the batter, sometimes noodle are added, I guess it will be hard to flip the whole pancake!
I handle the easiest method Osaka style; I mixed the cabbage and red onion in batter and pour the batter. Like the name says, I added whatever i like please free to add whatever you like. Is that cool this recipe!
Yield: 2 medium pancakes or one big one
Self raising flour: ¼ cup
Milk: ¼ cup
Water or dashi : ¼ cup (I used water)
Egg: one count (I omitted)
Salt: a pinch
Mix everything together (the batter is quiet watery)
Cabbage: 1/2 cup sliced thinly
Red onion: 2 tbsp miced
*Seafood (shrimp) or thinly sliced meat can be used as topping!
Add the veggie in batter and mix well.
Method how to make pancake?
Heat a crepe pan or non stick skillet. Spray some oil, pour the batter with veggie, with spatula spread the veggie evenly.
Cover and cook in medium heat, after 2 or 3 min , turn the pancake! If the pancake is huge, there is lots of chance to break into pieces.
AsI am so used to make the pancake/dosa in Indian cooking, I found pretty easy to flip!
Enjoy the pancake topped with hot sauce or mayonnaise. I used siracha!
Mugicha (roasted barley tea) is a tisane, made with roasted barley. Very popular drink in Japan , can be substituted for coffee –very healthy drink.
I roasted barley until they turn brown (I didn’t made dark) Boil 10 ounces or huge tea cup of water and add 3 to 4 tbsp of roasted barley, simmer for another 6 min. Drain the water and keep in frigde for cooler version or serve hot.
I like to sweeten with one tsp of honey and lemon! Good for ur throat and of course for your soul!
This barley water reminds our homemade medicinal drink that our granny uses to make to clear the bladder! After consuming this drink be ready for many restroom trips!
Both dishes , somehow I felt as Indian flavor. For the drink, sure someone has to acquire the taste, to love it!
