Spring is finally bracing our corner. The warm weather and blooming garden, the spirit is high. The summer time change in March made me more happy, I can click most of my picture with a natural sunlight till 7.00 PM :)
After seeing Happy Cook raisin buns monday. I ended up turning my oven late evening! Hoping to click with the late sunlight.
If you are new or don't know Happy cook, she is an happy soul woman who warm up her oven pretty much every (day) weekend! She does magic with her oven, mesmerize with her delicious baking goodies. I need to get another opinion from her family what they think about her macarons every month :)
I bookmarked her recipe of sweet buns (basic), knowing well that I should convert her recipe into cups. The job turned easier with the help of scale. Before proceeding, I noted few changes, like adding whole wheat flour and replacing egg with flax seeds, etc..
Once I started measuring, here came the real unexpected trouble with yeast! She used fresh and I had dry rapid yeast. The quantity mentioned was too high ! Too late, I couldn't ask any suggestion in FB - so proceed with little guessing... The buns turned out soft , sweet, perfect for the next day breakfast! I used some mixed fruits leftover from my fruitcake! Yeap, it was a decade ago I baked fruitcake! After all, the buns are excellent and keepsake. Thanks Happy Cook you are a sweet darling :)
For an original recipe, refer her sweet dough
Warm few seconds in microwave the next day!

Method
Add the yeast in bowl, sugar and luke warm milk. Whisk it briefly. Let it sit for 5 minutes until they foam. Now add the flax seeds + water. Mix well yeast and flax seeds.
In a bowl, add the flours, make a well in midlle, add the soften butter, salt and yeast mixture. Form a sticky dough. if needed add a tsp of water.
Turn the dough in slightly flour surface, knead the dough by hand for 10 minutes.
Great work out for spring! Don't be tempted of adding any flour!
The dough will turn soft and elastic!
Spray a bowl with oil put the dough in bowl and turn the oily surface up.
Cover and let it rise until double. It took 45 minutes.
Now, punch down the air, flat the dough, add mixed fruits (u can use any of ur choice like: chocoalate chips, raisins, check her place)
Mix the dough until the fruits get mixed. Make 8 even balls, shape it round.
Place in greased pan or cookie sheet. Let it rise another 30 minutes (until double)
Preheat the oven for 375 C, place the buns and cook until the top turns golden brown (about 18 to 20 min).
Once they come out from oven, brush with butter - The buns top will remain soft.
Warm few seconds in microwave the next day!

btw, I have been meaning to make your sweet buns. Thanks for introducing Happy Cook and her blog. :)
Love the way you replaced eggs with flax.It never shows though. The buns look perfect and nobody will feel the flax in them.Sometimes flax leaves grains in the finished product but this one looks great.
Thanks! :)
Bread looks really yum, like the tutty fruity bun sold in bakeries..

I did the choc version from HC's blog and am addicted to it..Your bread buns look great with the specks of red and green.
Thank you so much for sending this in.
Flax seeds can be skipped + the tsp of water indicated along.
I don't feel it will affect the texture and taste of bun!
I must figure out about the yeast as the book i have is always using fresh yeast.
This has come our so fluffy. Love the fruits in them, so colourfull. Next time i am gonna use these as it reminds me of the buns we get back home from the bakers.
Thankyou for trying the recipe,
I still dont have the courage to bake bread at home after a couple of disasters :( :( :(
Enjoy
