Spring is finally bracing our corner. The warm weather and blooming garden, the spirit is high. The summer time change in March made me more happy, I can click most of my picture with a natural sunlight till 7.00 PM :)
After seeing Happy Cook raisin buns monday. I ended up turning my oven late evening! Hoping to click with the late sunlight.
If you are new or don't know Happy cook, she is an happy soul woman who warm up her oven pretty much every (day) weekend! She does magic with her oven, mesmerize with her delicious baking goodies. I need to get another opinion from her family what they think about her macarons every month :)
I bookmarked her recipe of sweet buns (basic), knowing well that I should convert her recipe into cups. The job turned easier with the help of scale. Before proceeding, I noted few changes, like adding whole wheat flour and replacing egg with flax seeds, etc..
Once I started measuring, here came the real unexpected trouble with yeast! She used fresh and I had dry rapid yeast. The quantity mentioned was too high ! Too late, I couldn't ask any suggestion in FB - so proceed with little guessing... The buns turned out soft , sweet, perfect for the next day breakfast! I used some mixed fruits leftover from my fruitcake! Yeap, it was a decade ago I baked fruitcake! After all, the buns are excellent and keepsake. Thanks Happy Cook you are a sweet darling :)

Love the way you replaced eggs with flax.It never shows though.The buns look perfect and nobody will feel the flax in them.Sometimes flax leaves grains in the finished product but this one looks great.

the buns look perfect! Love the addition of that dried fruit...we'd get something similar in India years ago, these buns took me straight back to childhood!

Those remind me of my childhood days when i used o buy this from the bakery on the way to school as lunch. Thats a grea idea to use flax seeds in place of eggs. I have this milled flax seed, which i have been planning to incorporate in dishes or as egg substitute. I will be trying this :)

Parita:she used egg yolk- which gives a richness!
Flax seeds can be skipped + the tsp of water indicated along.
I don't feel it will affect the texture and taste of bun!

I must figure out about the yeast as the book i have is always using fresh yeast.
This has come our so fluffy. Love the fruits in them, so colourfull. Next time i am gonna use these as it reminds me of the buns we get back home from the bakers.
