Pedas

The summer breaks starts tomorrow for school kids. I will be going on blog break for few weeks. Hope everyone will enjoy the season with lots of outdoor fun, activities and barbeque!
If you live in US, all the tools, grill, T-shirt ads would have remind you: Father’s Day is around the corner.  Why the grill is so masculine? My DH never touched the grill, he is so scared when the flames pop-up while spraying oil. I am the one who handle it though I never own one before!
So think out of the box, what your dad/father in law likes and honor him/them. I am posting this milk sweet fudge pedas (Indian sweet) for all those adorable DADS.
The recipe is from Manjula’s Kitchen. Check out the video in her place, it is full proof recipe and taste extremely fresh those pedas.

Ingredients:
Paneer: ¾ cup
Milk powder: ¾ cup
Milk: ¾ cup
Sugar: ½ cup- make it powder (will be easy mixing in hands)
Ghee (I used) or unsalted butter: 3 tbsp
Elaichi: 4 or 5 freshed crushed

To garnish:
Pistachios: 1 tbsp

Method:

Make first the paneer.
Need 4 cups of whole milk and 2 tbsp of lemon juice.
Boil the milk in heavy bottom pan with medium heat. At this point, mix the lemon juice with ¼ cup of water and add to boiling milk.
The milk will curdle and the whey will separate. Drain in cheese cloth and run under cold water the cheese. Squeeze the excess water and hang it for 1 hour.

How to make Khova?
quiet an easy way without sweating much!
Heat the pan in medium heat, add the ghee/butter and melt it.
Add the milk powder, milk and paneer and mix well.
Cook the mixture on medium heat , until the mixture starts leaving the sides. The mixture will turn like a dough. It is khova.
Take out the khova from heat and let it cool until warm. DO NOT MIX THE SUGAR RIGHT AWAY IN HOT KHOVA.
Now mix the sugar and cardamom powder and knead until it blends well. I kept in fridge for 30 minutes at this stage. The dough was very easy to shape it and not sticky.
Take a small size or desired shape dough and make a patties.
Put some pistachios on top and serve them immediately.
You can store in air thigh container and refrigerate for days! I bet it won’t last for hours!

I wish you a Happy & Safe Summer and Happy Father’s Day! Will be Back in Few weeks.
