Easy Omega-3 Granola

I bought one packet of granola and never finished it! I realized it was not my kind of snack or breakfast! They were extremely sweet and too much cinnamon in every spoonful! But I am an oat, nuts and dry fruits person which made me think once again.
I scored many granola recipes in the web and filtered few. I found one: used as "template recipe". I played with the ingredients that I liked/wanted and recreated for my taste buds with less sugar and rich in Omega-3. The word "omega-3" granola comes out with expensive price tag in supermarket store shelves. But it is quiet easy to assemble an heart healthy snack with few pantry ingredients.
Walnuts and Flaxseed are excellent source of Omega-3 fatty acid. The cardamom and nutmeg gave an aromatic Indian touch! The right amount of honey and less oil made me pick this recipe. The granola can be served with yogurt, fruits, sprinkled over ice cream and even salad!
Except oats, honey and oil everything can be substituted according your taste and need.





Ingredients:

Dry ingredients
*Old Fashionned Oats: 1 & 1/2 cup
Chopped Walnuts: 1/2 cup
Sliced Almond: 1/4 cup
Ground Flaxseed: 1/4 cup
Cardamom: 6 pods (peeled and crushed into powder)
Ground Nutmeg: 1/8 tsp
Ground Ginger: 1/4 tsp
Salt: 1/8 tsp (or a pinch)

Wet ingredients
*Honey: 1/4 cup (increase to 1/3 cup for sweeter version)
*Vegetable oil: 1 tbsp

Dried fruit: 1/2 cup (Candied ginger/cranberries/raisin) -as they were sweeten I omitted the brown sugar from the original recipe.

Method

Preheat  oven to 300°F. Line a baking sheet with parchment paper. Mix the dry of ingredients together in a large bowl.
Stir honey and oil in a small saucepan in medium low heat until smooth.
Pour the honey & oil over the oats mixture, stir well they should be coated well.
Spread on the sheet and bake for 20 to 25 minutes ( stir every 10 minutes) -Did twice for this amount.
Watch out for golden color, tend to brown quickly at the end.
Take out and place the parchment in rack. If you want clumpy once taken out of the oven DO NOT STIR
Let it cool and mix the Dry fruit.


* Except those items everything can be substituted

Variations: unsweetened coconut- sunflower seeds, pecans, dried pineapple, dried mango,
Spice substitute: Cinnamon- all spices,etc..



 Try at home, you never think of store bought box again. Is that easy to make your own healthy granola at home?

This is a hearty snack/breakfast. I too do not like most of the store bought granola. and it looks pretty :-)

Cham, cutting the yucca for the fries is not hard. Remember it is boiled first? That makes the cutting easy.
Ah! Mix in the dry fruit at the end!! I just made a batch of granola, and my raisins came out all hardened.. :( Will definitely keep your recipe for future reference! :)

PS: What are those small white squares in your granola?
