Slimy veggie in crispy form

Finally I am able to access after 3 days my blogger account. For a moment, I thought if they disabled my account for the inactivity of my side :)
I was cooking, clicking but hardly had time to work around my pictures. You may ask: Why I should work with the picture? I recently tried the Raw picture Mode/RAW image format in my DSLR. Though I have heard of it, never dared to try it.... If you are a person who has passion for clicking and have time (or enjoy) to process Raw pictures. I encourage you to give a try. Yes, you need to work (touch up the picture)through the computer. Not like .JPEG readily available to load and print or share. You will be amazed to see even an under exposure picture can be easily manipulated without changing much the quality. All the pictures in this post were clicked in RAW format, processed and converted into JPEG through computer.
I clicked indoor (around 6.30 pm) with poor natural lighting. All my pictures were under exposed (which I expected). After almost 15 clicks my card alarmed it was full! The only disadvantage side, yes Raw mode is larger (pretty much 4 times bigger than .JPEG). I am totally a newbie in Raw mode clicking, took another step forward to explore the option available in my camera. I cannot provide much details right now, hopefully later on....
Coming to the recipe, the inspiration of this pakodas came from the famous "Sweet Stores" in my place. Mine is a mimic of deep fried version but pan fried. After all it is a heart friendly recipe :) None will believe the slimy veggie can be so crisp!



Print 


Okra halved: 2 cups
Corn flour: 1/4 cup
Besan flour: 1/4 cup
Rice flour: 2 tbsp
Salt: 3/4 to 1 tsp
Chilli powder: 1 to 2 tsp (according ur spice level)
Sesame seeds: 1 tbsp
Water: 1 to 2 tsp (not more)

Oil: 2 to 3 tbsp

Method
*Rinse, pat dry with clean kitchen towel the okra.
*Cut the head and tail part. Now split in half and halve again. Pretty much ur finger long and half of thickness.
*Now mix all the dry ingredients together and toss the split okra with dry ingredients.
The veggie will get coat, sprinkle a 1 tsp to 2 tsp (not more) wet slightly the flour mixture just to hold the veggie. You may find little flour at the end of bowl not sticking- no problem leave it- you can sprinkle directly in the pan over the okra)
Add 2 tsp of oil in a pan and sprinkle the okra in pan. DO NOT CROWD THE PAN. Fry in medium heat until they turn golden brown and very crispy. Oil can be added 1 tsp at the time.
Do into three batches (as per the quantity mention above).
Enjoy as a side dish or tea time snack!

The main reason I have not taken pics in Raw is that it takes so much place in you memory and in you pc.
The okra looks crunchy delicious.
Indeed blogger was out yesterday and it was a whole lot of panick bloggers asking about it in FB :-)

Pan fried is not deep frying, it is done by drizzling little oil in pan (flat bottom pan) or tawa. Hope it is clear.

Thank you so much for the writing on RAW format. After packing up my film SLR cameras , I have switched to general digital camera. Hope to buy a DSLR when my pocket is bit filled...fortunately I have kept great collection of my lenses which will fit all Canon DSLR.
I like this recipe. I do make crispy Okora, but I never tried Besan so far. I am keeping a note of the ingredients and the proportion you have used.. WIll try immediately.

Shooting in Raw gives us more options while editing pictures. Being short of time I hardly shoot in raw :( I have to make this fried okras..
