Side dish is important in our daily menu. My mom does at least 2 side dishes, one gravy for rice, without counting of rasam . But for me to make one side dish, I always scratch my head everyday! How I could make the same veggie without much work and tasty!
A curry could be either dry fry (varuval), stir fry (vathakal), steamed (vega veittal), or with podi.
Podi (masala powder) vegetable has a different taste,slightly crunchy and nutty. It could be prepared without any aisle. This curry is classified under dry category, which goes well with sambar, rasam or curd rice. One of the popular veggie is often used with podi is brinjal, next come potato. The podi can be used in green banana, taro root, sweet potato, etc.

Ingredients:
Bengal gram/channa dhal:1 tsp
Urad dhal:1 tsp
Coriander seeds:1 tsp
Dry chillies: 8 num
Hing: ¼ tsp/ or small piece
Salt: ¾ tsp
Method:
Dry roast all the ingredients except salt, cool it and grind slightly coarsely with salt.
I triple the quantity and store it in small bottle, I can use less or more according my quantity of vegetable.

Brinjal curry with podi
Ingredients:
Brinjal: 5 or 6 small purple, washed halved and cut lengthwise
Podi (masala powder): 1 1/2 tbsp
Turmeric: a pinch
Seasonning:
Mustard seeds: ½ tsp
Curry leaves: few
Oil: 2 tsp
Heat a pan with oil, add the mustard seeds, when they start to pop, add curry leaves, the brinjal , turmeric and sprinkle the powder, mix thoroughly and cook in medium heat covered. If you think, it is less spicy u can always adjust with chilli powder. Fry well, until the brinjal turns soft. The curry will not take more than 8 minutes in stove.
It is excellent with rice and gravy!

The podi can be used in potato too.
Same method, use 3 medium potatoes, peel it and dice it .Follow the same method used for brinjal.

Hi cham, could not see the pictures, may be some uploading problem. Is this podi is same as the one you all use with idli mixing with oil.Defintely to be tried in regular cooking.

Pudis are very essential at my home too.. Use them for all sorts of south-indian dishes.

Podi looks wonderful, Brinjal and Potato both are perfect for chapatis as well. Good one Cham, podi is a great entry for 15mins.

I just use sambar powder or chilli powder - this looks fabulous and I can't help but drool at how perfect both dishes look - the brinjal and the potato. Ultimate.
My mom always made 2 veggie side dishes too everyday.

potato looks perfectly roasted cham. and brinjal podi curry looks yummy. that's the only dish i like using brinjal... and baingan bartha is another fav.

We use a pudi called Palya pudi for dry bhajis. the resulatant curry is not so dry though because of the way we cook the veggies. LOVED the look of the brinjal with pudi. Gotta try it your way. Do you not add any water for cooking the brinjal?

Podi`s come in handy, saves time too. Brinjal is my fav....looks spicy with the podi. I add cumin to the podi.

This is really a cool recipe. I have a podi powder already made, a little different than yours. But the next time i make eggplant I am definitley doing this! we all love eggplant & i never used the powder to cook eggplant. I have used it in beans,potatoes & other dry things. I'll let you know.

this podi is really handy. Can be preserved in an air tight bottle and used when required. Veggies look delicious...

I have several podis at any given time and most often, used them to make stuffed brinjal with some onion added to the mix!
We also make the same podi..except that we add salt and hing later while making the dish..thanks for the easy and tasty dishes

Amma always used podi for ennai katrikkai... my classmate's mom used it for potato... I love the potato version as much and each time I make potato roast, I add some ;-)

Cham the veggies look great. Our Nana loves brinjal, but to be honest, I don't care for it. He made me try it once about 6 years ago, and have not had it since! But being a simple Irish girl, I love my potatoes! Great post :)
