Side dish is important in our daily menu. My mom does at least 2 side dishes, one gravy for rice, without counting of rasam . But for me to make one side dish, I always scratch my head everyday! How I could make the same veggie without much work and tasty!
A curry could be either dry fry (varuval), stir fry (vathakal), steamed (vega veittal), or with podi.
Podi (masala powder) vegetable has a different taste,slightly crunchy and nutty. It could be prepared without any aisle. This curry is classified under dry category, which goes well with sambar, rasam or curd rice. One of the popular veggie is often used with podi is brinjal, next come potato. The podi can be used in green banana, taro root, sweet potato, etc.
I will give the podi recipe in smaller quantities. If you are a person who like less spicy, reduce the amount of chillies to 6, u can always add chilli powder and salt while cooking.

Urad dhal:1 tsp
Coriander seeds:1 tsp
Dry chillies: 8 num
Hing: ¼ tsp/ or small piece
Salt: ¾ tsp

Dry roast all the ingredients except salt, cool it and grind slightly coarsely with salt.
I triple the quantity and store it in small bottle, I can use less or more according my quantity of vegetable.

Brinjal curry with podi
Ingredients:
Brinjal: 5 or 6 small purple, washed halved and cut lengthwise
Brinjal: 5 or 6 small purple, washed halved and cut lengthwise
Podi (masala powder): 1 1/2 tbsp
Turmeric: a pinch
Seasonning:
Mustard seeds: ½ tsp
Curry leaves: few
Oil: 2 tsp
Heat a pan with oil, add the mustard seeds, when they start to pop, add curry leaves, the brinjal , turmeric and sprinkle the powder, mix thoroughly and cook in medium heat covered. If you think, it is less spicy u can always adjust with chilli powder. Fry well, until the brinjal turns soft. The curry will not take more than 8 minutes in stove.
It is excellent with rice and gravy!

Podi looks wonderful, Brinjal and Potato both are perfect for chapatis as well. Good one Cham, podi is a great entry for 15mins.
My mom always made 2 veggie side dishes too everyday.
And I love the potato with podi. I've never made potato with Podi, Cham. Must try!

Vani In both recipes, i didn't use any water. Keep the flame in medium or low and cover the pan
