Brinjal Raita-Vegetable of the week event

One of the vegetable that I simply love for the bright & vibrant purple color (Brinjal). The creamy vegetable tastes almost like a butter for me :) the only drawback it absorbs all the cooking oil, for that reason, I just salt the cut brinjal and rinse it (to prevent drinking my oil)
We almost make many dishes from gravy, dry curry, rice etc…but this one is simple & easy version of Raita/pachadi.




Ingredients:

Brinjal : 1 Long variety
Chilli powder: 1 tsp
Salt : as required
Garam masala : 1/ 2 tsp
Oil: 1 or 2 tsp

For Raita:

Curd/Yogurt: 1 cup
Minced onion: ¼ Optional
Salt: per ur taste
Chilli pwder: a pinch to sprinkle

Method
Slice thinly the brinjal, sprinkle some salt and let it rest for 10 min and rinse it ( Will prevent absorbing oil and remove any bitterness) or skip it if ur lazy and end up making high calorie raita version :)
Mix the chilli powder & Garam masala , and little salt to the brinjal . Marinate for 10 min.
Heat a skillet with oil, arrange the brinjal and fry it

To make the raita
Beat the curd with salt and add the minced onion. Take a bowl start a layer of brinjal, pour the curd /yogurt mixer, again start with another layer of brinjal sprinkle with chilli powder and keep refrigerated until serving.

Brinjal raita can be served with any biryani or pulao.
