Tomato Pulao

Another variety rice, pretty easy and quick to do in any busy days or if you ran out of any vegetables. Other than onion and tomatoes, you don’t have to cut any vegetables. Tomato rice (Takkali Sadam) or tomato pulao is pretty much a south Indian on pot meal or comfort food. The rice has a tangy spicy flavor. I make it often for my Little one’s lunch box who enjoy having variety rice.




Ingredients:

Rice (Sona Masuri): 1 cup
Onion: 1 diced
Tomato: 2 large or 3 medium (Grind into puree)
Chili powder: 1 or 2 tsp
Turmeric powder: ¼ tsp
Mint: few sprig
Coriander: few leaves chopped
Ginger-Garlic paste: 1 tsp
Salt: as per your taste
Water: 2 1/4 cup


Seasoning:

Cinnamon: small stick
Cloves: 2
Green cardamom: 1 pod
Bay Leave: 1
Cumin: 1 tsp
Oil or Ghee: 2 tsp



Method to prepare:

Heat a pot or pressure cooker with Ghee. Starts with cumin seeds and follow all the seasoning one by one. Add the onion and fry until translucent, add the Ginger Garlic paste and fry until fragrant. Once, you get a nice aroma; add the tomato puree and all powders. When the gravy starts to thick and leave oil in pot. Add the washed rice (I used sona masuri- medium grain rice) , fry for 5 minutes and pour water ratio 1: 2 ¼. Adjust the salt, add the leaves and close the pressure cooker or pot with lid.
If you cook in pressure cooker, switch off after 4 whistles.
In pot, once the mixture starts to boil cover and simmer. Cook for 20 min and switch off the stove. Let it stand another 10 min before opening the lid .



Enjoy the rice with raita or with a special Veg raita.

Cham- yes,this is an easy to make quick rice item. I also add peas and red bell pepper to this to make it more tasty.

This is my husband's favorite too. Do you know the water/rice proportion for basmathi rice while cooking in pressure cooker. The regular rice turns out good, but when I use basmathi rice, the bottom gets burnt or it becomes very mushy.

Madhu: When u use pressure cooker, for Basumati i use 1:1 1/4, and leave only 2 or 3 whistles. Switch off the stove and move ur pan or cooker in cool Burner or countertop and let it rest for a while (10 min). I don't know how much water u use normally, to not get mushy, fry the rice with masala until the rice is coated and try to reduce 1/4 amount of water than ur normal ratio and cook it.
Most of the time i make all pulao item in pressure cooker and use a heavy lid to cover it and cook the rice for 20 min in low heat! Not even a single rice stick the bottom

Thanks for the detailed info. Cham. I have to try it and let you know how it turns out. I think I use 1.5 cups. Because I don't get it right in the pressure cooker, what I was doing is I boil around 3 cups of water and add 1 cup of rice and keep checking if its done and then drain it in a colander under cold running water.
