Another fruit variety which i love not only for their vibrant color but more for munching the little seeds … they are simply succulent, tangy and sweet when they are eaten right away. Whenever I buy my berries, they will be vanished in a matter of day, I never give a chance to sit in my fridge to be baked or tossed in dessert…
Especially those raspberries are the delicate berry category; Raspberry is very tender, soft and very prone to fungus!

Other than dessert use, the fruit can be made as vinaigrette too. Well the idea of vinaigrette bloomed after we have been baked from the heat wave, past few days. The raspberry got an elegant make over in my kitchen.

For the Raspberry vinaigrette (done according my personal taste, you can omit honey if u want or feel free to add more or less the below ingredients)
Raspberry: 1/2 cup
Dijon Mustard: 1 tbsp
Lemon: 1/2 would be great
Honey: 1tsp
Olive oil: 2 Tbsp
Salt: a pinch
1.Make a puree with the raspberry and strain out the seeds.
2.Add the juice of lemon, mustard, honey and salt whisk briefly.
3.Slowly add the olive oil and whisk until they are well blended.
4.You have fruity tangy and little spicy vinaigrette to go with any salad…
Salad idea for this Raspberry vinaigrette: Toss some baby spinach, cucumber , avocado , red onion and drizzle some Raspberry vinaigrette.

Item needed (again stuff the roll per your taste or by choice)
Sandwich roll
Cucumber sliced
Cheese slice of ur choice
Lettuce: few leaves
Red onion: sliced
Capsicum: few sliced thinly
Jalapeno pepper (optional) pickled ( but i used it)
Raspberry vinaigrette: 1 or 2 tsp
Butter light or Light mayonnaise:
Open the bread and warm the bread in toaster oven. Spreads some butter or mayo arranges all the veggies, topped with jalapeno peppers, drizzle some vinaigrette on top and enjoy the sandwich!
