Fenugreek seeds have been widely used in many Tamilian dishes. The seeds is used in many ways for making idlis/dosas, tamarind rice (pulihora), sambar and rasam, etc... But the fresh methi leaves and the dry one (kasturi methi) has been added to my fridge and pantry after coming to US. When I bought from the store for the first time. I really didn’t had any idea how to cook with fresh leaves, so I just make with dhal like this one.
But the ever-popular combo “Aloo (potato) methi”, “Methi parathas” vegetarian version and “methi chicken” have been a hit in every house. The leaves have a slight bitter taste so combining with the spud or chicken, it doesn’t reduce the bitterness! But we mentally think, the truth, the potato or chicken suck/share the leaves bitter taste.
For a change, I tried the Gobi methi combo. Simple, quick, healthy dry curry, can be served with rice or roti.
Note: I used frozen methi
Ingredients:
Cauliflower: 1 small
Fresh fenugreek leaves or frozen packet of fresh leaves: fresh small bunch (only leaves)
Onion: 1/2 minced
Ginger: 1 tsp grated
Green chillies: 3 minced
Red chillies powder: 1 tsp , less or more
Cumin: 1 tsp
Oil: 2 tsp
Salt: per ur taste
Method:
Cut into small florets.Soak in salted hot water for few minutes (help to kill worms in the florets)
Take only leaves and rinse in fresh water.
Now, heat a pot with oil , add the cumin, followed by minced onion, green chillies and ginger. Fry until they turn translucent.
Add the cleaned florets and fry for about 8 to 10 minutes , don't use the lid the cauliflower cooks faster it may turn muchy.
Add the salt, red chilli powder and let the masala coat well with the veggie, now add the leaves and let it saute another 7 or 8 minutes . Final adjust with salt and spice and switch off the stove.
Can be served with roti or rice.
Tip: When u cut the fenugreek leaves, add some salt and mix it, keep it aside for few minutes . Rinse again before cooking, help remove the bitterness. But i love the bitterness of the green.

how was the frozen methi? long back i tried some brand frozen methi and more than 50% were sticks! which one did u use, if i my ask? tx
