We never sit together in weekdays to have our breakfast. We are not the one who skip breakfast either. It is always grab and go situation: bars, piece of toast, wrap, etc...
But when it comes to weekend. There is no particular time table, everything is shifted. I guess, it is the same scenario in your home too. When we are usually up, it is neither breakfast time or lunch time. It really depends upon my mood if I want to cook an elaborate breakfast or lunch! Most of the time, I really like to whip up something quick like this crust less pie not much chopping and stirring required and finish all the leftover from the previous night. The pie is easy to put together. By the time, you sip your tea, check your e-mail , read some hot headlines and clear up some feeds from your reader. The pie is really to be devour.
Crust less pie
Yield: If u have a big appetite it is barely enough for yourself
Ingredients
Egg: 2 counts
Cheese (pepper jack ): 1 /4 cup shredded (I shredded 2 slices of pepper jack)
Milk: 2 tbsp
Pancake mix or AP flour: 2 tbsp (totally optional but gives body to ur pie)
Salt: a pinch
Freshly ground
black pepper
Tomato: 1 small thinly sliced
Green onion: 1 Tbsp
Mint leaves: 1 tbsp chopped finely
Method:
Preheat the oven at 375 C.
Crack the eggs and slightly beat, now add all the other ingredients except the tomato.
Whisk all the ingredients together briefly.
Butter a small pie dish or two individual ramekins. Pour the egg mixture and arrange the tomato on top.
Bake in the oven for 30 or 35 min when tested toothpick comes out clean.
I baked this one in my conventional oven and took exactly 35 min. It could be a large portion if it is accompanied with other brunch items. For me, the pie and little salad will be a great satisfying meal!

Life is so crazy right now. We're trying to get our cargo to leave before us, plus suddenly our social life is too busy trying to meet everybody before we leave. I'll be glad when the day of departure comes! Not had time to visit all.
