Edamame Cauliflower soup

It is that cool to feel or see the spring is near. Ok, I know most of you bracing many storms for the season. But we are blessed for 3 days in rows with 70 degrees. I have my first bloom, sign of spring in my garden this weekend! The wet weather is forecasted soon in  our area. Don't say I am lucky!
This soup was made in one of those wet days!
I love anything Soy: tofu, soybeans, soy crumble etc,.... except the soy milk.
I am hooked to dairy product, from the childhood cow milk was my favorite! I cannot even imagine a day without milk, curd, tea or coffee! The soy milk leaves a different after taste which I personally dislike ( Don't mistake me if you are vegan).
Edamame is a "fancy" name for the young baby soybean in pod. The beans are rich in protein and vitamins. Squeeze the pod with fingers the beans slide! Excellent if you are a snacking guy! In US, we get in two ways, either readily available boiled-salted in pods or in freezer! Other than snacking right away, I end up tossing in salad and make a soup!

Ingredients
Edamame beans: 1 cup
Cauliflower florets: 2 cups (cleaned)
Onion: 1/2 diced
butter: 1 tsp
Water: 1 1/2 cups
Milk: 1/2 cup
Mint: fresh few leaves
Salt/ pepper: as needed

Method
Melt the butter, sauté the onion until translucent. Add the cauliflower and water. Cover and let it simmer for few min. until the florets are tender ( It doesn't take more than 10 min). Remove the lid, add the so beans and stir the milk. Let it boil few more min (beans are already cooked).
Let it cool and throw in blender with the mint leaves.
Make a puree and return to the pot adjust the seasoning, dilute the soup with milk or water if needed.

The soup tastes great warm or even at room temperature!

70F? How lucky are you!!! We hardly are managing with low 40s now, very windy too.
Edamame soup looks so nice, beautiful color and very healthy too. Great recipe.
Very new kind of soup with edamame and cauliflower. The first bloom of the season looks cute. I like the cup with S on it, I guess it is for me :D

I went to their place in person to see it cham, then only I recommended it. It was a very clean facility. In any case I make sambhar for N and rasam for me every week..

Soup looks awesome.Cauliflower and edamame are a great combination.I used to make a curry out of these two when I was living in US.BUt here in europe Iam unable to find these beans..or probably its in a different name..

Soup for cold times..how I wish.We are experiencing an early summer in Chennai and its already too hot:):).But we've got used to it..:).Never heard of edamame,blame it on my ignorance of soy/soy products.Like you,I too do not like the after taste of soy milk.I tried the flavored versions,still no luck.Love the soup bowl..:):)

Beautiful capture of Daffodil flower!
And soup...look so creamy and thick. But i m little bit skeptic abt cauliflower-ish taste in soup. Though, your lovely pic of soup convinced me to try it some day. :)
