Pizza Hut style breadstick and dipping sauce

I never thought of having a food processor and the fancy "Kitchen Aid" till now. They are the bare essential in American kitchen, at least the food processor. Kneading the bread by hand is almost out of fashion. But, I treasure two appliances: Mixer (a robust Indian version of blender) and grinder. I cannot imagine my cooking even a single day without the mixer. In twelve years, it is my third mixer, with little attention it last for ever. I even stocked up for back up. But my ultra-grinder is used to maximum weekly once for grinding idli/dosa or for spongy medu vadas. This appliance was sold with two attachments which I never even though to use. One is the coconut scrapper, the attachment scares me with lots of sharp teeth. Pretty sure, the blade is dangerous to handle, got hurt whenever I removed the attachment. I rarely use it !

Dough attachment for grinder
The second one is the dough attachment for making rotis  and puris. The dough hook is never been tested in my kitchen. Few days back, I tried the pizza dough with atta hook. I got a smooth and nice dough. It rose beautifully and the final pizza turned out excellent. I wondered why I never thought of using it. I can skip now the hand kneading for the bread dough. So if you have a dough attachment, dust it and put it in use. Sure many of you store the attachment forever somewhere.

Pizza is my son's favorite dine-out. He orders pizza and the breadsticks. Well, he eats the pizza and keep the breadsticks for dinner and mostly for breakfast too. Sure even an Italian will not eat breadsticks for breakfast!
I pulled the recipe from here. The original recipe is for breadmachine. Well I don't own either. I modified to my convenience. I halved the recipe well I don't want the whole family eats breadsticks for next day morning. To my surprise, they all got vanished within few minutes. It taste great hot from the oven, I personally didn't like to reheat!






Yield : about 6 to 7 breadsticks

Pizza hut style Breadsticks

Ingredients:
A.P flour/ bread flour: 2 cups
Warm water: 2/3 cup
Sugar: 1/2 tsp
Olive oil: 1 1/2 tsp
Salt: 1/2 tsp
Oregano: 1 tsp
Powder milk: 1 1/2 tsp (can be replaced by milk)
Active Dry Yeast: 1 tsp


Topping
Dry parmesan cheese: 1 tbsp
Garlic powder: 1/2 tsp
Garlic Salt/ I used Salt (i reduced according some reviewer): 1/4 tsp
Onion powder: 1/2 tsp (skipped because i had any)
Oregano: 1/2 tsp
Olive oil: 1/8 cup


Dissolve the yeast, warm water and sugar. Let it rest 10 min. until the yeast foam.
With grinder attachment, remove the stone, fix the atta dough hook and secure it.
Add the flour, salt, oregano and milk powder.
Now start the grinder, add slowly the yeast mixture, the dough will start forming.
At the end add the olive oil. Scrap the side with a Flat spatula.
Once the dough is formed, run the grinder exactly 5 to  8 minutes. The dough will be little sticky.
Help the dough to move around the hook.
Breadstick dough in grinder

By hand: proceed the same in a bowl and knead in work surface for 8 to 10 minutes.
Oil a bowl, give a shape and drop the dough and turn oil side up. Clingwrap and let it rise.
Once the dough is doubled.
Flour the work surface, punch down the air and roll the dough into a rectangle shape to 1/2 inch to 3/4 inch thick.
With a pizza cutter, cut the dough into strips.
Place on greased tray, place the strips (leave space in between), don't worry about the shape,  cover and let it rise until doubled.
Prepare the topping , mix all together.
Once the dough is ready, brush with olive oil, sprinkle the topping.
Bake it at 350 F for 12 to 15 min. Mine were not turning golden brown. (I have seen many reviewer mentioned it)
Serve warm with dipping sauce.


Pizza hut style Dipping sauce:

Again i modified according my halved recipe and my taste.

Ingredients:
Tomato Sauce: 1 cup
Italian seasoning: 1 tsp
Oregano: 1/2 tsp
Garlic Powder: 1/4 tsp
Sugar: 1/2 tsp
Water: 2 tbsp

Method:
Simmer the sauce for 10 minutes. Serve warm along with breadsticks.

The sauce is extremely simple and great base for Pizza sauce too.
Verdict from my son: Not Bad Mom! Ok, I guess it is pretty closer.

What a coincidence. My mom just reminded me of the dough hook that I bought to make bread. I have a stand mixer, but I want to try with my ultra grind too. Bread looks yummy. Enjoy ur weekend.

Oh I envy u! U have a heavy duty grinder ( plus dough blade)! I wish I had one. What brand is it? did u buy it here?

Grinder is Ultra-grinder (1.25L) is the smallest -110V- the price tag is same in India (checked last here) and US. So better buying online in US if u want the 110V- price should be $225.

Yumm breadstick. I do not a have a fancy mixer grinder :(, no dough hook. I do not even use the bulky food processor any more. Only my Magic Bullet is extensively used

I too treasure my ultra grind and this coconut scrapper and atta kneader is useful too! Coconut scrapper is bit dangerous as u said and atta kneader I always use it,very handy it is!

I klove these breadsticks and hey i like kneading the dough with my hands...the old fashioned way. It is therapeutic.

The dipping sauce looks bright n yummy , although i like a cheesy dip for the bread sticks:)

I too have a grinder but not the kneader attachement,only the coconut scraper. But I love the scraper,thgh the teeth has slowly started coming out. Mine is a bit older version of Ultra.With the frozen coconut available there,I suppose the scrapper will not be of much use to you there.

I must try this Cham. Perfect snack. I missed two recipe here thanks to fever,exams etc. Its time to catch up :)
