After coming back from my summer vacation, this recipe is featured weekly in our menu. It will continue until my son got enough. He sticks to one kind of food for a while and starts refusing later! That is the scenario in my house.
He simply named this rice as Attai (Dad's sister) pulao or Green pulao.
In Karnataka, Pulao is a popular rice variety, don't be surprised if someone/hotel offers pulao for breakfast! My sister in law prepared for us when we visited her place. First, I was surprised that she can cook, ok probably I am exaggerating here. I have never seen her making anything apart serving some tea! Whenever we stayed with her, she managed to serve only outside food. Or we just go out to eat (even breakfast). She shamelessly admits she hates cooking! My DH says she is a good cook but lazy! Probably if you hate cooking you might be lazy :)

Ingredients
Basmati Rice: 1 cup
Mixed vegetable (carrot, beans, peas, potato): 1/2 cup
Ghee/oil: 2 tbsp
Sea Salt: 3/4 tsp ( the ratio is low sodium) You may increase or even decrease.
Masala to be ground
Medium Onion: 1
Cilantro: 1/2 cup loosely packed or a handful
Ingredients

Masala to be ground

Mint leaves: 2 tbsp (optional but give a wonderful aroma)
Ginger: a inch piece
Garlic pods: 4 to 5 peeled
Green Chillies: 5 to 6
Cloves: 2
Cinnamon stick: a inch/ small piece
Ground the items listed above without adding any water into a paste
Rinse the rice and soak the rice (without water) for 20 minutes.
Method:
Pressure cooker method:
Heat the ghee or oil in the pressure cooker, add the ground masala and the vegetables, fry until the oil/ghee separate (approx.5 min). Mix the soaked rice and gently mix with the masala. Add 1 + 1/2 cup of water, adjust with salt ( 3/4 tsp- ratio is low sodium), you may increase or decrease per your taste.
Close the lid and put the weight, keep in medium heat. Leave one whistle and switch off the stove.
Serve with raita or even with any gravy!

But my daughter too likes a rice like this. If I make chicken in the pressure cooker, I will cook rice with this masala in the same cooker without washing the remains of the chicken curry. She likes it even better
