4.Find the middle of the pastry sheet, start folding from the botton till the middle of sheet.
5.Now start folding from the top until you meet the middle.
6.Fold like a book now, you get like a log. Keep refrigerate another 30 min. Preheat the oven at 400 C. Take a cookie sheet, cover with foil or parchement paper or silpad 7.Cut the log 1/2 inch wide 8.Place in the sheet and pinch slightly the two rolls together (they won't unroll). To get the hearth shape, slightly open in middle. The palmiers should be really spacious, they grow tremendously while baking. 9.Bake for 10 or 12 until they turn golden brown on top. (mine where really tiny so if you do in one sheet the palmiers will be huge.)
For the sweet palmiers: The other 1/2 of the sheet can be turn into sweet version (palmier) Sprinkle 2 to 3 tbsp of sugar and after cutting into little hearts dredge again in sugar and place in cookie sheet.
