Palmiers known as little hearts cookies in India, very flaky, crispy and sweet cookies with a cute little heart shape would have won so many little hearts. Yes, I was so fond of these cookies too. Recently my son got some of these cookies from Indian grocery. Seeing them, hinted me that I could recreate them at home but of course in savory version.
Palmiers are one of the simplest things you can do without much work or even with less baking skills. The puff sheet does the wonder for you and you have some wonderful “hors d’oeuvre/amuse bouche”in a matter of minutes. They are often called palm leaf, elephant ears in culinary world.
The sweet version can be served as a dessert; the savory one would be great for cocktail party. I baked a savory one but also included the sweet version. Valentine’s day is around the corner so fit perfectly many events. About the Valentines Day is nothing peculiar in my agenda! For those who celebrate or remember once in a year the loved one probably is much needed. I am not against any of these days but still I don’t wait to thank anyone or loved once in a year. Ingredients:
Puff pastry sheet (pepperidge farm): 1/2 sheet
Parmesan cheese: 1/4 cup grated
Red chilli flakes: 1 tbsp
Method:
Thaw the frozen puff sheet according the package instruction about 30 minutes.
To make mini little hearts/palmiers. I cut the puff sheet in half .(shape of the sheet should be in rectangle shape, please refer to the pictures shown down)
1.In a clean work surface, sprinkle 2 tbsp of cheese.
2.Place the puff sheet on top of cheese worksurface
3.Sprinkle the remaining grated cheese and red chilli flakes.
4.Find the middle of the pastry sheet, start folding from the botton till the middle of sheet.
5.Now start folding from the top until you meet the middle.
6.Fold like a book now, you get like a log.
Keep refrigerate another 30 min.
Preheat the oven at 400 C.
Take a cookie sheet, cover with foil or parchement paper or silpad
7.Cut the log 1/2 inch wide
8.Place in the sheet and pinch slightly the two rolls together (they won't unroll). To get the hearth shape, slightly open in middle.
The palmiers should be really spacious, they grow tremendously while baking.
9.Bake for 10 or 12 until they turn golden brown on top.
(mine where really tiny so if you do in one sheet the palmiers will be huge.)
For the sweet palmiers:
The other 1/2 of the sheet can be turn into sweet version (palmier)
Sprinkle 2 to 3 tbsp of sugar and after cutting into little hearts dredge again in sugar and place in cookie sheet.

And the little hearts look absolutely gorgeous!!!! They are savory but they look just like the ones we get in India...Britannia Little Hearts. They have come out so perfectly!

Palmiers look lovely and apt for v'day..In india,we call it 'Little Hearts' and its my all time fav..but we get only the sweet version.Thanks for sharing the recipe..
