Don’t know how to start cooking with your microwave? Or if you are someone who just reheat all leftover or heat your cup of milk to make coffee. Here you go with a simple, healthy drink to kick-start your microwave cooking skills: Badam kheer.
If you can heat the milk without any failure, this kheer is rescued dessert at anytime to try in microwave. Whether is cold outside or hot, a versatile drink, yes, it could be enjoyed cold or hot depending upon season or mood.
This Badam kheer could be thick or thin depending how much almond you add it.
Some facts of Almond and California: California produces 80% of world’s almond due to the climate condition, some other crops are walnuts, kiwi and avocado. California ships 70% of total crop worldwide. The almond field stretches more than 500 miles in Central Valley of California. In 2002, a record of 1.084 billion pounds of almond was harvested! That should have been a flood of almond everywhere!
Usually, I get some fresh crop in the month of Oct to Jan, in my local farmer market or even in the grocery store. You can really feel the quality of nuts in CA but in India nuts are always expensive!

Here the recipe:
Microwave Badam Kheer/Almond drink
Ingredients:
Almonds: 25 counts (if you decrease the milk will be thin or decrease nuts if u use full cream milk)
Milk I used 2%: 2 cups (keep ½ cup separate to grind the almonds)
Sugar: ¼ cup (If you want a mild taste use 2 to3 tbsp what I did)
Chironji/Charoli/Saara payir: few to garnish
Blanching the almond first:
Take a bowl – put the almonds and some water (appro ¾ cup) until the nuts are drown.
Keep in microwave for 2 minutes.
Take out and keep it aside
Next take a big microwave safe bowl, pour 1 ½ cup of milk and keep 4 minutes in microwave.
Remove the boiling milk bowl and keep it aside.
Now, see if u can handle the almonds, just squeeze the nuts, it should slide easily out. Rinse in water and add the almonds in small blender/mixer jar with ½ cup of milk , grind into little coarse paste.
Add the almond paste in hot milk and mix it. Keep another 3 minutes.
Take out add the sugar and mix well- keep another 1 or 2 minutes.
Garnish with the Chironji nuts and serve hot or cold !
Warning: Need plenty of attention after 4 minutes of milk boiling, It may overflow!
Note: if you want richer, use full cream milk and can reduce the almond or even use evaporated milk, saffron, cardamom too.
But the badam kheer is one of simplest drink that every mom does with few available ingredients available in her pantry.
