Diwali around the corner, some have already started making sweets to share with friends and family, some still in dilemma what to prepare and end up buying a sweet box. Well, this coconut burfi is easy to whip up with only few ingredients and less than 30 minutes. Well if you are the one who doesn’t know what is sugar thread, which is most important stage in many Indian sweet including this burfi! Here a rescue burfi recipe. You can try this shortcut method without making the sugar syrup.
Fresh coconut (without the brown part) and non-fat condensed milk are key to success for this white chewy fudge!
Ingredients
Fresh grated coconut: 4 cups
Non-fat condensed milk: 1 tin
Cardamom: 6 counts (remove the outer skin and make fine powder)
Method:
Grease a tray with butter or ghee.
Pulse in mixer or blender the coconut to get a fine and grainy pieces!
The final burfi get a smooth buttery texture. (It could be optional).
In medium heat, keep a big pan. Add the coconut and non-fat condensed milk. And keep stiring until they come together.
Sprinkle the cardamom powder and switch off the stove. It will take about 15 min. more or less!
Burfi stage: The mixture should come together and form a big mass or lump.
Take out and spread in grease tray.
Normally you should press the burfi flat with the help of spatula try to smooth the surface.
Let it cool completely before making any slices!
Important note: Use a fresh coconut (don’t scrap till the end–the brown part will spoil the look of white burfi)
Non-fat sweetened condensed milk: doesn’t have the brownish look.
Cardamom: make a fine powder. ( I didn’t and u can see the black spot here and there )
